Pure Matcha Cake Recipe 🍰🍵
If you're a matcha lover (and who isn’t these days?), then this Pure Matcha Cake recipe is about to become your new favorite treat. Not only is this cake packed with the earthy, vibrant flavor of matcha, but it’s also a delightful dessert that’s as fun to make as it is to eat. So grab your whisk and let’s dive into the delicious world of matcha magic!
Let’s get baking!
What You’ll Need:
For the cake:
Pure Matcha – 12g (about 2 teaspoons)
Butter – 7 tablespoons
Granulated Sugar – 150g
Eggs – 6 large (we’re going all out!)
Cake Flour – 120g
Baking Powder – 1/2 tsp
Milk – 80ml
Vanilla Extract – 1 tsp
Olive Oil – 60ml
For the decoration:
Heavy Whipping Cream – 500ml
Strawberries – 6 (to give it that pop of freshness)
White Chocolate – 250g (for an extra bit of sweetness)
Pure Matcha – 8g (for that gorgeous green topping)
Method:
Step 1: Preheat & Prep
Start by preheating your oven to 175°C (350°F).
Line your cake tray with parchment paper to make sure nothing sticks, because nothing ruins cake vibes like a stuck cake!
Step 2: Mix It Up
Mix your dry ingredients (flour, matcha, baking powder) together in one bowl. This will make sure the matcha is evenly spread throughout your cake batter, so every bite has that perfect matcha flavor.
Step 3: Whisk the Eggs
In a large bowl, beat together the egg whites, cream, and 1/3 of the sugar until you have stiff peaks (we’re talking fluffy clouds of egg white magic here).
In a separate bowl, beat together the remaining 2/3 sugar, egg yolks, and vanilla extract until smooth.
Step 4: Combine
Gently fold your dry mix into the egg yolk mixture. We’re going for a smooth, lump-free batter.
Add in the olive oil to give the cake that moist texture.
Finally, fold in the egg white meringue mix. Be gentle here—overmixing will knock out all that lovely air you whipped into the whites!
Time to Bake!
Pour your beautiful green batter into your prepared tins and bake for 18-22 minutes. Keep an eye on it, because we want it perfectly baked, not dry!
Once done, let the cake cool for about 20 minutes before decorating.
Decorating Time!
Now comes the fun part—decorating!
Step 1: Make the Matcha Whipped Cream
Heat the heavy cream in a saucepan until it’s just simmering. You don’t want to overdo it!
Sift in the matcha powder to avoid any lumps. Stir until it’s perfectly blended into a smooth, matcha-flavored dream.
Add in the white chocolate and stir until melted and combined. This adds a subtle sweetness to complement the earthy matcha.
Once mixed, let it chill in the fridge for 2-3 hours so the flavors can really come together.
Step 2: Whip it!
After chilling, gently whip the cream mixture until you get soft peaks. This will be your fluffy, velvety topping that’s going to take your cake to the next level.
Step 3: Decorate!
Frost your cooled cake with the matcha-infused whipped cream, top with fresh strawberries, and add a sprinkle of extra matcha for that Insta-worthy green finish!
